Merry Christmas and Happy Hanukkah!

We have always said we celebrate Christmakkah. Today that is even more true...

After I clean the house (yay), we're having latkes for lunch and then F and I are going x-c skiing. Then home for frito pies and off downtown to see the farolitos A New Mexico style Christmakkah!

    I would love to have you over for latkes! But here is the super easy recipe in case you want to try:
    12 oz hash browns
    1/2 med onion in cuisinart very finely grated
    1 egg beaten
    1 t salt
    1/2 t baking powder
    1 1/2 T flour
    veg oil

    mix all ingredients
    smoosh into little roundish things about 1 heaping T each, maybe a little more)
    heat oil in frying pan
    fry in batches (make a roundish thing then mash down with a spatula)
    keep them warm on a baking sheet in the oven until they're all cooked

    Note that everyone has a different latke recipe, and everyone thinks theirs is best!
    Also - eat with applesauce (which my daughter thinks is gross) or sour cream (which I think is gross).

    The latkes sound really good and easy! I might just try to make some or DH - we were "gifted" with a huge box of dehydrated hashbrowns recently.
