A New Recipe and Things on My Mind

May 4th, 2016 at 02:00 am

Just made this:
http://www.popsugar.com/food/Gwyneth-Paltrow-Carbonara-Recipe-41083033

Best new recipe I've made in a long time, and inexpensive (half a packet of turkey bacon = $2, pasta = $1, three eggs = 60c, some parmesan = 40c).

I had tried another pasta carbonara recipe and this was a lot better.

It was good that I made this comfort food tonight. D's dad fell about a month ago in his apartment, was in hospital, and is now in a rehab facility. Social services decided he could go back to his apartment, even though D's family thought he'd be going into residential care. His dad can't walk, and often can't get out of bed. They were looking at all sorts of places near D's sister. But it seems like the residential care places are mostly full of people with dementia, and D's dad is 87 but no dementia at all! He'd be miserable there. D was super upset; it's hard being so far away (we are in the US, but D's family is in the UK). Anyway, social services is going to have someone come out three times a day to help him out of bed, help him bathe, get him back in bed. And he'll get meals. I think D is now ok with the idea.

The only thing I said is that the apartment he's in now isn't suitable. He needs to be on the first floor not second since he has mobility issues, and he needs to be in the same town as D's sister not 2 hours away.

We have a hotel room booked where he lives now and another booked where D's sister lives. So we'll see what happens...

Other news: F is on a school camping trip (the first since her anxiety last fall). She was really excited about the trip, and I am really excited for her! I hope she's having a ton of fun! She spied the graham crackers in the teacher's truck, and she and her friends were excited for s'mores, too! I spent the evening cleaning weird parts of the house that don't get cleaned as often (top of pantry shelves, etc) and spackling things and tightening hinges.

My parents come to visit on Thursday afternoon... do you do those "handyman" things before your family comes to visit?

ha--I turn into a maniac cleaner and tidier before guests. The carbonara sounds delicious. I'm going to try it. So sorry to hear about D's dad; we're going through the same thing with S's dad, but fortunately he has siblings in the same town. But still it's hard for everyone.

S's dad is in the UK, too, right? Part of the problem seems to be austerity measures (since it's County social services that is paying for some of this), and I am unfamiliar with the different types of care facilities (they don't seem to be exactly equivalent). I hope s's dad is ok!!!

Sorry to hear that -- I know we will go through this someday; NT's gran is in her late 80s and his parents in their late 60s. All are in the UK. Luckily there's some family still out there, but I know NT is going to have a hard time not being able to help as much as he would want to. Hopefully that's a couple years away for us, but you never know.

I primarily get to major cleaning done before guests. It's the one time I'm more concerned with having everything cleaned at once! My parents arrive here on Monday, with my college daughter. Smile

So sorry that D's dad is in this situation. It must be awful to be so far away, unable to help. But it does sound like staying at home is better than residential care at this point.

Yep, S's dad is in the UK. And like you, the county social services has helped him with many things--in-home daily care for a couple of years. They sent a caregiver to help him with bathing and making meals. But after he got so weak (he's 90 and has been diabetic for 60+ years), he's moved into a nursing home-type situation. The financial side has been very confusing for all of us since some of the county-provided care was free, but now he is paying for his nursing home care--although if he can't pay, the county will claim part/all of the house. But we've spent a lot of time with s's siblings to try to figure out what is owed, what was provided, etc.

I am thankful for visitors because I clean my house better before a visitor than any other time. Motivational deadlines, ya know. Wink

Did you actually use bucatini in the recipe or just regular spaghetti? I can't find bucatini.

I just used Spaghetti! And I used turkey bacon from Trader Joe's!

Sometimes visitors motivates a cleaning spree ... This last time though, I just didn't have the brain space available to even worry about it too much. My brother ended up being the only family member who came over and met Kari / saw my place. He's seen it like it was many times before, so definitely not a shocker. Smile Too bad he couldn't have seen it a week later when I actually got a cleaning wind ...
