Financial Thoughts for Today

Good and bad...

- Made asian meatballs with rice for dinner which is everyone's favorite. Yum, yum, yum! And frugal!

- Took our dog to the vet for annual wellness. She had her shots, too. Grand total: $90.87. But she is healthy, so I am thankful!

- Got an email from UNM Press. My royalties (which have dwindled since I wrote the book 9 years ago) are over the required amount, so they're putting $105.46 into my account. That will go to the mortgage!

- I got an email from the library that the book I wanted (This is Where I Leave You) is available. I just checked it out on my phone. I haven't seen the movie (I'm not a huge movie fan; something to do with sitting still).

- As I sit here typing away, F is practicing piano. She seems super frustrated and I can't help her because I can't play an instrument at all. She'll need to wait for D to come home. But I feel terrible that I can't help and that I never learned an instrument.

    I didn't know you wrote a book! I've been there listening to my kids get frustrated on their flutes at times. It is part of the process sometimes. And Asian meatballs sound yummy!

    My book... ahhh... so, so, so nerdy! It is called The Train Stops Here: New Mexico's Railway Legacy (that was the publisher's title, not mine!) an it's about the railroad depots of New Mexico.

    Here is the Asian Meatballs recipe (it's originally from family circle; I modified the amount of asian five spice since it was waaay too much in the original recipe I thought)

    meatballs:
    1.5 lbs ground turkey
    1 c bread crumbs
    2 eggs lightly beaten
    3 scallions
    2 T ginger (either powder or fresh grated ginger)
    1 t onion powder
    1/4 t chinese 5 spice
    1 T soy sauce

    sauce:
    1 c broth (veggie or chicken)
    1/2 c ketchup
    1 8 oz can tomato sauce
    2 T rice vinegar

    combine sauce ingredients and put in a slow cooker
    in a large bowl mix meatball ingredients and mix into 1/3 c meatballs - about 12
    put meatballs in the cooker in a single layer
    cook high 4 hours or low 6 hours
    service with rice

    Thanks for the recipe! That sounds like something my kids would like. Is the Chinese 5-spice something that can be purchased in a regular grocery store?

    Yes, but I actually leave it out... I just use a tiny pinch of cinnamon...
