Lunch Planning: Like Meal Planning but Lunchier

​I have probably told you that I have to be gluten free. This is not a choice (celiac genes, digestive issues, microscopic colitis) and I know a lot of other people have to be on a gf diet, too or choose to be so that they don't have symptoms (there are a lot of diverse symptoms).

This is my Lunch Planning (and includes my daughter's lunch plan, too). My husband is on his own, because he makes his own lunch, but I can tell you what he eats, too.

My husband:
- leftovers or a turkey sandwich (or tuna sandwich on Thursdays when I make two can's worth of tuna)
- apple
- tortilla chips
Yes, that's what he eats every day. I would get so bored.

My daughter:
she gets veggies and dip, a piece of fruit, some chips/crisps and a cookie, and then a main, following this basic schedule:
- Monday - hot lunch (this is something pre-made from the store like Trader Joe's chicken strips or potstickers in her thermos and is in lieu of the very expensive and disgusting school hot lunches)
- Tuesday - turkey and cheese wrap (in a tortilla)
- Wednesday - bean and cheese burrito
- Thursday - tuna wrap with avocado
- Friday - mac and cheese or a quesadilla with a salad (instead of veggies and dip)

My lunch plan:
I also toss in a piece of fruit and chips/crisps, sometimes carrots, too. Her lunch coordinates with mine (so if she's having refried beans in a burrito, I have them on a corn tortilla)
- Monday - one egg (hardboiled or fried), string cheese or goat cheese with chips
- Tuesday - turkey sandwich with cheese rolled in lettuce
- Wednesday - Beans and cheese between corn tortillas
- Thursday - tuna with avocado
- Friday - Salad

This meal plan limits what I need to buy each week: one cucumber, some radishes, lettuce, tortillas (corn and flour) but only once every two weeks, some cheese, one packet of turkey, one can of refried beans, two cans of tuna, an avocado, a couple of types of chips (usually tortilla chips and one other type), a couple of types of fruit. I always have eggs on hand. Oh! and something for F's "hot lunch."

    Not nearly this organized- do leftovers, frozen bean and cheese burritos, pasta with veggies, frozen dumplings, curry (freeze some in tupperware when I make a batch)- whatever's on hand.

    Greenleaf - I will abandon the plan instantly if we have leftovers! I love leftovers!

    I was diagnosed with microscopic colitis about a year and a half ago, what an ordeal! I only take one Imodium per day and I have no issues, thank goodness. I pack my lunch every day, with an occasional lunch out with friends or takeout lunch. I also pack lunch every day for my boys, they refuse to buy lunch at school.

    I work with somebody who eats the same thing every single day. He said he's brought it for years. Your lunch menu is putting me in the mood for a wrap now - I'll have to add it to my shopping list this week!

    Nobody is gluten free here (although I do know someone who is intentionally gluten free - he spends loads on food)

    We're another household that uses either leftovers for lunch or a portion of what's being 'prepped' for dinner.' If I'm making tuna casserole, I can easily keep out sufficient tuna to make Tuna Melt or Tuna stuffed French toast.

    I was at one of the large grocery chains on Saturday as they were assembling an imaginative display of Passover foods. There was a giant sign above the display reading 'GLUTEN FREE' and dozens of boxes and canisters to make foods like cake mix, cookies, crackers, biscuits, dumplings, fish, Panko and so much more.

    I also eat GF. I'm ok with basically the same meal most days and it's just me, tho. Also "soup" and "salad" are broad terms allowing for a lot of variety. The majority of the time I have a salad with a chicken breast chopped up into it, and either a cup of soup or berries and plain yogurt. If I've cooked an entree with several servings, I might take leftovers one or two days a week, and about once every 3 weeks, I'll get lunch from somewhere outside of the office (I work near downtown's "restaurant row"). Also, once a month, we do an office lunch that might be a potluck party or might be going out as a group to a restaurant or having food from a local eatery catered in.

    I also keep a few assorted pieces of fruit and veg in the office refrigerator and a container of mixed dried fruit and nuts on my desk for snacks.

    Bluebird - you're the first person I know with microscopic colitis! I've got it under control with diet (I refused to take the drug I was prescribed after reading about side effects and rebound).

    Scottish Girl - I have no idea how anyone eats the same thing every day. I can do basically the same meal, like Dido, but variations are important!

    Snafu - I do use the leftovers a lot! That's what we had today (leftover pad thai) but some of our meals don't make leftovers (or not enough for all three of us). That leftover pad thai was good! Our supermarket doesn't even have a passover section, but I wish it did! A couple of years ago I got gf matzo when I was visiting my mom and dad in California; it was awesome stuff! The other packaged stuff is so expensive, though! I make my own baked goods... it's better anyway.

    Dido - I also go out for lunch about once every three weeks. There's a really sweet little place down the street from my office, local, owned by this nice couple (and their kids help out sometimes!). They will make a sandwich on gf bread, and it's the BEST sandwich (I like the TKY with turkey, caramelized onions, provolone and pesto mayo). So if you're ever in Santa Fe - go to Palacio Cafe! Also the best lemonade (real stuff!) and home made flan.
