Sunday - Meal Plan, Some Frugal Stuff, Baking

This week's meal plan:
S - pad thai
M - white chicken chile (will make three additional freezer meals!)
T - mexican eggs and mixed veg
W - tuna melts and salad
T - risotto with peas and goat cheese and sundried tomatoes
F - baked potatoes and broccoli (save leftover mash for salmon cakes the next night)
S - salmon cakes

One more frugal thing: my rear tail light burned out, so we ordered a new bulb (about $6) and D will put it in himself. He replaces tail lights and puts the snow tires on himself, which saves a lot of money!

Oh - and I forgot - I am going downstairs to make a carrot cake in a couple of minutes. I was going to make it yesterday, but there was so much going on. Carrot cake at our house doesn't last long, but I'm sure there'll be a piece for F after school! Her soccer practice is early tomorrow due to the time change (4 pm!). I may be bringing other kids to the practice, too, since it's so early and I stop working at 3 when I go to pick F up from school.

Anything else frugal? Yes! How could I forget! I got $300 from my parents for my birthday! Once again, I am supposed to spend it on myself. D and I need a new duvet. Ours is in fine condition, but it's a full size not a queen, so it doesn't fit in the duvet cover and it doesn't completely cover us. We'll pass on the full-size duvet to F who has a full-size bed and duvet cover.

OK, down to the kitchen... I'm going to listen to the Serial Dynasty podcast while I bake.

    A nice warm duvet sounds great. I've been thinking of baking pumpkin bread all day; yu my have been my inspiration to actually get it done.

    Oh, I love pumpkin bread! The carrot cake is done, but my family don't want to eat it until AFTER dinner! Ack! I could eat at least half of it RIGHT NOW!!!

    Happy belated birthday! I enjoyed getting a new duvet at Christmas time last
    gear. It's funny how something practical is such a welcome present at this stage of life.

    SA participants are wonderful motivators for finance and even non financial projects. Patient Saver mentioned making bread pudding which reminded me how much we enjoy it on a cold, rainy day. Off I went to soak bread, raisins and make custard. It's all ready to assemble in the crock pot in the morning.

    White Chicken Chili

    4 cans white beans
    2 cans of white corn (or Trader Joe’s roasted corn - one bag)
    3 cups chicken broth (I use better than boullion)
    2 can diced green chilies (one tub of frozen bueno if you can get that)
    2 chicken bouillon cubes (just the cubes or if you're using better than boullion, just two additional teaspoons, not mixed with water)
    1 medium onion chopped fine
    1 Tablespoon garlic powder
    1 Tablespoon oregano
    1 Tablespoon cumin
    1/2 teaspoon cayenne
    4 cups shredded chicken breasts (I use three breasts)
    sour cream

    Put everything in a crockpot (except the sour cream) - 6 hours (I cook on low all day)
    When it’s done, shred chicken with two forks
    Stir in sour cream to taste and some salt/pepper

    It's super yummy! We ate dinner and then had three freezer meals left!!!
